Information about processing biscuit in industry

Biscuits are the most popular baked goods that almost everyone consumes. Based on the dough properties, cookies are divided into: short or soft dough cookies hard dough crackers. Biscuits are made primarily from wheat flour, sugar, fat, and leavening agents, as well as other smaller ingredients. These ingredients are mixed together using one of the few approaches available for mixing in batter mixers. 


Raw material of Dough

The type of dough depends on the cookie being made, and each brand uses its own recipe. Some use plain flour while others use multigrain flour with multiple dried fruits. The most important factors at this stage are the consistency and temperature of the dough. Most companies use a simple dough mixer for this, which can process the dough automatically. Some of these mixers come with built-in temperature sensors and suction arms that make sure each batch comes out just right. There are vertical spindle, horizontal, and continuous mixers on the market, and each has its own benefit for a particular type of biscuit.

Fermentation

Well known in the industry, fermentation with yeast is for hard dough, especially for soda hard dough.Fermentation is to make the biscuits get crunchy taste.It causes yeast and bacteria to convert sugars into carbon dioxide,among other things during baking.That’s what makes dough dough rise.As for soft dough, it needs high sugar and fat , so there’s no need to ferment.


Forming of Biscuit

For hard dough: After dough’s fermentation is finished, some products need a Laminator to overlaps of dough sheets which as a consequence give the flaky appearance and texture to the final products(Especially soda or cream crackers).Then,with Gauge Rolls positioned on after the other in series of three or four.The Gauge Rolls reduce the thickness of the continuous dough sheet.Before cutting the dough by a Rotary Cutter,a relaxation conveyor is used to relax the tension in the dough sheet, as the soda cracker doughs are subject to considerable shrinkage after cutting and during baking. A small amount of edge scrap is cut off and this is diverted by side scrap wheels to the scrap return system.

For soft dough: After being broken gently by roller feeding machine, the soft dough enter the roller mold directly for shaping, the round-type belt secures the qualified of flan to reach one hundred percent.

Baking

Biscuits’ baking usually takes places in tunnel ovens.The ovens’ power could be direct or indirect fired, gas or electric and vary in length and band width.Different types of heat and moisture control can in fact have different effects on the final product.


Cooling

After baking, the biscuits need to be gently cooled down to ambient temperature: forced cooling is not advisable as it generates unwanted “checking” effects on the biscuit shells, leaving them fragile and affecting the overall efficiency of the production.


Packing

After stacking, biscuits in line convey to packing conveyor for convenience of picking up manually and then feed to next packing system.There are also Packing Machines that meet the need of reducing manpower, production safety, cost saving, and high efficiency for customers.
